What does resting the tongue on the roof of the mouth behind the front teeth provide. I've heard instruction for the tongue to be behind the lower teeth away from the roof as well. I suspect it may have to do with the meridians??

Yes, connecting the tongue to the roof of the mouth does connect the energy of the central channel.
